- 225 g lion's mane mushrooms
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 large egg
- 1 teaspoon Worcestershire sauce
- 1/4 cup diced sweet onion
- 1 tablespoon finely chopped fresh parsley, plus more for garnish
- 1 1/2 teaspoons Old Bay seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/3 cup panko breadcrumbs
- 2 tablespoons olive oil for cooking
- Lemon wedges and tartar sauce for serving

Instructions
- Mushroom preparation : Shred lion's mane mushrooms to look like crab meat in pieces. Transfer them to a large skillet with 2 tablespoons of water and a pinch of salt.
- Cooking mushrooms : Cook mushrooms over medium heat, covered, stirring occasionally for 5 to 10 minutes, until all the water has evaporated. Set aside and let cool.
- Preparing the base : In a large bowl, add mayonnaise, Dijon mustard, egg, egg, Worcestershire sauce, onion, parsley, Old Bay seasoning, smoked paprika, smoked paprika, salt, and pepper. Blend until well combined. Book.
- Draining mushrooms : Once mushrooms have cooled, drain or squeeze out excess moisture. This will prevent the crab cakes from getting soggy.
