Lion's Mane Steak: A Tasty and Satisfying Alternative

ingredients

  • 3 large Lion's Mane mushrooms (about 450 g)
  • 2 tablespoons vegetable oil
  • 2 tablespoons BBQ seasoning (your favorite)
  • 1 tablespoon Wicked Kitchen Sage & Onion Seasoning
  • Salt and pepper
  • 3 tablespoons vegetable butter
  • 4 tablespoons BBQ sauce (Wicked Kitchen or your favorite)
  • Fresh herbs to garnish (thyme or parsley)

Instructions

  1. Preheating the oven : Preheat the oven to 200°C (convection) or 220°C (without convection). This passage in the oven will allow your Lion's Mane Steak to be cooked evenly after searing them well in the pan.
  2. Mushroom preparation : Lightly cut the bottom of the Lion's Mane mushrooms so they sit flat in the pan. This allows for even cooking and better final presentation.
  3. Mushroom Seizure: Heat a large ovenproof skillet (such as a cast iron skillet) to medium-high heat. Pour in vegetable oil to coat the bottom of the pan. Place the Lion's Mane mushrooms, foot side down, and let them cook for one to two minutes to soften them.
  4. Then, place a second heavy skillet over the mushrooms and let them cook for another minute. Using a folded kitchen towel or tongs, gently press the top skillet to start pressing the mushrooms. As the mushrooms release their water, apply increasingly firm pressure to flatten them and promote even caramelization.
  5. Caramelization and Seasoning: Continue pressing and cooking Lion's Mane mushrooms for 5 to 6 minutes, until golden brown. Turn them over with tongs or a spatula, add a little bit of oil if necessary, and press them again for 5 minutes until they are golden brown on the other side and have halved in thickness.
  6. Mix BBQ seasoning and Sage & Onion seasoning. Sprinkle some of it over the mushrooms with a little salt and pepper. Turn them over and cook for an additional minute, add oil for caramelization, then flip and season the other side. Continue pressing and searing until both sides are lightly toasted and crisp. You can adjust the thickness of the steaks according to the pressure applied, here about 2 cm.
  7. Cooking in the oven: Once the Lion's Mane mushrooms are golden brown, transfer the pan directly to the oven for 10 minutes. This allows the flavors to intensify and the mushrooms to become even more tender, while maintaining their meaty texture.
  8. Preparation of the sauce: Remove the Lion's Mane Steaks from the pan and place them on a cutting board. Put the skillet back on medium heat. Add the vegetable butter while stirring and scraping the bottom of the pan to recover all the flavors. Add the BBQ sauce as well, mixing well until you get a thick, flavorful sauce.
  9. Dressage : Pour some of the sauce on your plates. Cut the Lion's Mane Steaks into thin slices and arrange them over the sauce. Garnish with fresh thyme or parsley if you have them. Enjoy with a steak knife for a complete gastronomic experience!
